Jamar…. The Jamar cheese is the true symbol of our creativity and dedication. This cheese is the result of a long and complex production process. This complexity is undoubtedly reflected in its unmatched flavours.
A unique ripening process is what makes this cheese one-of-a-kind. Maturation takes place for the most part in a 70-metre deep Karstic cave located in the vicinity of our company’s premises. Here, the cheese ripens at constant temperature and humidity levels throughout the year. The end result is a semi-hard cheese with a crumbly texture. Its intense and persistent aromas with hints of blue cheese are reminiscent of the cave Jamar has aged in. In this variety of cheese the fragrance of high-quality milk is combined with strong and spicy flavours.
Jamar is excellent when served with local varieties of honey. It can also be added to a wide range of dishes, giving each of them a distinctive, decisive and unique touch. To this day, Jamar has inspired many chefs to create award-wining dishes.
